That’s why our healthy Greek yogurt corn dip includes a few extra additions like red pepper and broccoli!
We enjoyed this dip so much in fact, that we ate half of it during and after taking our photos, haha!
This recipe requires just 15 minutes for prep and can be made cold or hot.
Since we’re in the middle of a heatwave here in Vancouver, BC (seriously, we broke records here last week with temperatures beyond 108 F), we chose to serve it cold.
You can recreate this recipe with fresh, frozen, or even canned ingredients.

Greek Yogurt Corn Dip with Fire Roasted Red Peppers
Servings: Serves 10
Prep Time: 15 minutes
Cook Time: You can eat this dip cold or hot. To warm it, you’ll need to cook it for 25 minutes at 350 F.
Ingredients: To make this unique and absolutely delicious red pepper corn dip, you’ll need the following items.
- corn (fresh, frozen, canned – its up to you!)
- fire roasted red peppers
- fresh jalapeño peppers
- garlic
- green onions
- lime
- Greek yogurt
- mayonaise (or Veganaise)
- a variety of shreeded cheese*
We recommend chopping all of your vegetables before mixing your dip.

Then, once you’ve made your dip, combine vegetables with shredded cheese before pouring the liquid on top of your vegetables to dress them.

* since we had a leftover tray of cheese slices from Costco, Fran combined them and chopped them up to create a mix of Swiss, cheddar, and Monterey Jack cheese for our corn dip.

Greek Yogurt Corn Dip Instructions

Vegetables
Gather your ingredients and prep the following:
If using fresh corn, stand your shucked cob upright and carefully slice downwards with a sharp knife.
Cut 2 1/2 cups of fresh corn from cobs (or scoop up from a bag of frozen corn).
Chop 1 cup of brocolli florets (skip this step if you are using previously prepped frozen florets).
Dice 1 cup of fire roasted rep peppers.
Dice 1/2 cup fresh jalapeño peppers (you may want to wear gloves for this!)
Dice 1/4 cup green onions.
Mince 1 glove of garlic (unless you are using granulated garlic).
Optional: finely chop cilantro or parsley to create an even bolder flavor.

Combine:
- 2 1/2 cups corn
- 1 clove of minced garlic (or 1 tsp granulated garlic)
- 1/4 cup diced green onions
- 1/2 cup fresh jalapeño pepper
- zest of 1 lime (zest your lime first!)
- juice of 1 lime
- 1 cup brocolli
- 1 cup fire roasted red peppers
- optional: add cilantro or parsley

Then, shred 3 cups of your favorite cheese (we recommend sharp cheeses).
Mix in all shredded cheese.
Sauce
Combine:
- 1 cup Greek yogurt
- 1 cup mayonaise

Once your sauce is thoroughly combined, pour it over you corn and vegetable mix.

Mix well until all vegetables are dressed.
Serve and enjoy!

What to serve with corn dip
We served (devoured!) a variety of crunchy things with our corn dip including:
- yellow corn tortilla chips
- red corn tortilla chips (these were phenomenal)
- parmessan crisps
- ripple potato chips
- toasted bread (if you don’t have any tortilla chips available)
Want to keep it healthy? These coined vegetables are excellent for dipping:
- radishes
- carrots
- cucumbers
- zucchini
We recommend thick cut coins for optimal dipping!
Square shaped peppers and celery sticks are also divine.
Drinks that pair well with this dip
This tasty flavorful dip pairs well with:
- white wine
- sparkling lime or grapefruit water
- tequila
- beer
- coolers
- cider

Can you freeze corn dip?
Since this recipe uses mayonnaise, we do NOT recommend freezing it.
This goes for Veganaise too!
