Your palette will thank you for using shallots instead of onions and garlic.
I grew up eating it with ćevapčići and ajvar and highly recommend giving it a try with traditional Balkan food!

Creamy Greek Yogurt Cucumber Salad with Shallots
Servings: Serves 4
Prep Time: 20 minutes
Cook Time: No cooking is required for this recipe! Just prep your ingredients and combine.
Ingredients: You will need the following ingredients to recreate this fresh and colorful cucumber salad.
- 2 cucumbers
- 1 tbsp celery leaf
- 1 shallot
- 8 heirloom cherry tomatoes
- 1 green pepper
- 1 yellow pepper
- 350g Greek yogurt
- 3 tbsp mayonaisse
- 1 tbsp white vinegar
- 1/4 tsp vanilla sugar
- 1 lemon
- 1/2 tsp granulated garlic
- 1 tsp fresh dill
- 2 tbsp fresh parsley (1 for dressing, 1 to garnish)
- salt
- pepper
We recommend chopping your vegetables first and then making the dressing.
Once the dressing is done, mixing in your vegetables makes it easier to dress them!

Creamy Greek Yogurt Cucumber Salad with Shallots Recipe
Instructions:
Vegetables
Remove peels of 2 cucumbers lengthwise so that three portions of the peel are in tact.
Finely slice cucumbers into coin shapes (a mandolin will make this much faster)!
Finely mince 1 tbsp of celery leaf – set all celery leaf aside for dressing.
Finely slice 2 tbsp of shallots – set all shallot slices aside for dressing.
Quarter 8 heirloom cherry tomatoes.
Finely dice 3 tbsp each of green and yellow peppers.

Dressing
In a bowl, combine:
- 350g Greek yogurt
- 3 tbsp mayonaise
- 1 tbsp white vinegar
- zest of 1 small lemon (zest your lemon before juicing!)
- juice of 1 small lemon
- 1/4 tsp vanilla sugar (or sweetener of choice)
- 1/2 tsp granulated garlic
- 1 tsp fresh dill
- 1 tbsp finely minced celery leaf
- 2 tbsp minced parsley
- salt and pepper to taste
Whisk into a creamy consistency.

Create your cucumber salad
Use a spatula to combine your vegetables and salad dressing until all vegetables are dressed.
Decorate with 1 tbsp of parsley.
